What the sources tell us
The Gluten Intolerance Group guide to Mexican food names tamales, along with tacos and huevos rancheros, as part of a whole world of gluten-free Mexican-inspired possibilities. It calls corn one of the most central ingredients throughout Mexico and describes tamales as made of masa dough.[2]
Masa harina, the group explains in its guide to gluten-free grains, is a distinct type of corn flour made from corn treated with lime. It suggests using masa harina to make fresh corn tortillas or tamales.[1]
The National Celiac Association says corn is naturally gluten free, but it recommends making sure corn-based flours such as corn flour, cornmeal and masa are labeled gluten free, since they could have had cross-contact with gluten-containing grains during processing.[4]
Not every corn product is pure corn. The Gluten Intolerance Group notes that some corn tortillas contain a mix of corn and wheat flour, and it advises confirming the gluten-free status of the Mexican corn products you buy.[2]
In another article the group mentions the satisfyingly soft bite of a tamale as one of the textures that add to the pleasure of eating, and it notes that many made-from-scratch dishes use only a few basic ingredients, which can make it easier to tell what is in them.[3]
