What the sources tell us
The Celiac Disease Foundation says rice noodles and mung bean noodles are gluten free, in a note on its list of noodles that contain gluten, such as ramen, udon, chow mein and egg noodles. Its travel guide also lists rice and rice noodles among naturally gluten-free foods in Southeast Asian cuisine.[5][4]
Where the Celiac Disease Foundation says rice noodles are gluten free, the Gluten Intolerance Group says they are almost always gluten-free, and it advises checking the label on the package or asking the restaurant to make sure the noodles really are rice noodles and completely gluten-free.[5][6]
At a Thai restaurant, the group suggests choosing rice noodles over egg noodles, confirming with the server that they are gluten-free, and picking steamed rice if there is any doubt. It also notes that some sauces and flavorings in Thai cuisine may contain gluten.[6]
In its guide to Asian cuisine, the group explains that ramen and udon are often made with wheat flour, and that gluten-free versions of these noodles made with rice and other ingredients are now widely available.[7]
The GFCO list includes Traditional Pho Rice Noodles, Organic Traditional Pad Thai Rice Noodles and Brown Udon Rice Noodles, all from Lotus Foods.[3][1][2]
