What the sources tell us

The Celiac Disease Foundation lists graham crackers among common foods that contain gluten, in the same group of crackers as pretzels. It also lists cakes, cookies and pie crusts among the baked goods that contain gluten.[5]

The foundation counts graham among the varieties of wheat, alongside durum, emmer, semolina, spelt, farina and farro, and it describes gluten as the proteins in these grains that act as a glue that holds food together.[4]

The Gluten Intolerance Group's advanced label reading tips list graham flour with wheat-derived sources of gluten such as semolina, spelt and bulgur, and describe the ingredients on that list as essentially always gluten-containing.[7]

The foundation's advice is to read the label of any food that does not say gluten-free. It also notes that a product labeled wheat-free is not necessarily gluten-free, because it may still contain spelt, rye or barley-based ingredients.[5]

For s'mores, the Gluten Intolerance Group's grilling tips call for gluten-free graham crackers.[6]

The GFCO list includes Graham Crackers from Outside The Breadbox, Maple Graham Crackers from Hillside Lane Farm and 6.75oz Graham Crackers from Partake Foods. GFCO says a product on its list is certified only if it also carries one of its certification marks.[3][1][2]
