What the sources tell us

Couscous is a wheat product. The National Celiac Association says it is made from semolina, which comes from durum wheat, and that it would not be safe for someone with celiac disease or another gluten-related disorder.[8]

The Gluten Intolerance Group lists couscous among the forms of wheat to eliminate from a gluten-free diet, next to durum, spelt, semolina and bulgur. Its advanced label reading tips put couscous on a list of wheat-derived ingredients that are essentially always gluten-containing.[5][7]

The Celiac Disease Foundation groups couscous with pastas such as ravioli, dumplings and gnocchi in its list of common foods that contain gluten.[4]

For a swap, the association's dietitian uses quinoa instead of couscous in recipes and salads, calls it a very nutritious whole grain, and suggests making sure the quinoa is labeled gluten-free.[8]

The Gluten Intolerance Group suggests sorghum as a substitute for couscous, with a chewy texture and nutty flavor. It also describes sorghum as a good source of fiber, B vitamins, iron and potassium.[6]

The GFCO list includes Kaizen Couscous from Kaizen Food Company, CASSAVA PASTA (pearled couscous) from HEAVEN AND EARTH and Boostcous Protein Packed Couscous from Boostcous. A listed product counts as certified only when its package carries the GFCO mark.[2][3][1]
